You should be able to exclude the Slimsever directory from Norton
Corporate edition by a similar process as the home edition.

Open Configure, click File System Realtime Protection. 
In the right pane, click Options, check "Exclude selected files and
folders" 
Click Exclusions button. 
Select "Check file for exclusion before scanning". 
Click on Files/Folders button. 
Expand the drive, click the dir where Slimserver is installed ?

Or are you trying to use Slimserver on a work machine where Norton
preferences are locked out ?
