After a couple of cups of coffee and a lunchbreak in which I actually
had some time to look at things properly, I'm now sorted.  For some
reason, I have a user on my system called slimserver, but run
slimserver as a different (non-root) user - a nice red herring!  The
log file was owned by slimserver, and so hadn't got permission to be
written to by the slimserver process once it had given away root
privileges.

Sorry for all my flappings!
