Thanks KDF.
Rescan is not listed in my server settings/plugins. This is how I
noticed there was a problem.
I've run the command line debug options and from the output it seems as
though loads of plugins fail to load. I've just realised that Shoutcast
fails to work now too, but it looks like it'll be just one of most of
the plugins.

I've attached the log file but at the moment all I can think to do is a
SlimServer clean install and set it all up again (without copying across
my pref files, codecs directory etc, which is what I can only assume
must have caused the problem.
