Custom Browse plugin will allow you to browse by composer.

There are also some good threads here on the best ways to tag classical
music.

As for tagging vs folder hierarchy, if you have good accurate tags, the
hierarchy doesn't matter. That said, most people do create a structure
that involves Artist folders with 1 Album per subfolder.

As for album art, I prefer to embed the cover in each file's tag.  It
just seems more logical to keep all the meta-data inside the file
itself.
