[SlimDevices: Beginners] Scan has only found a small amount of my songs

Okay I'm sorry this is such a stupid question, but how do I create the
sub directories and shortcuts?  

I have my music in three folders.  I finally re-instaled and simply
picked one of the sub directories as the place to search for music. 
What is the best way to get the music from the other two folders?  I
tried to simply changed the place to search for music under settings
and while the music was grabbed by the slimserver the squeeze box did
not have it.  

When I hit play on the songs it would play on the box, but I had to hit
each one manually.  Everything evenually froze up and I had it reinstall
and start from scratch.  

Just trying to figure out what is easiest.  Sorry for what I'm sure is
a very silly question, but I have logged about 6 hours with all my
various troubles thus far so your help is greatly appreciated.
